I would describe a documentary as a nonfiction, informational video made to educate. Some essentials elements are a video baes on fact, and usually interviews. The largest thing that distinguishes a documentary from a narrative, is that a Hollywood film has a story. In a documentary, there isn't a story being told. It's just information (and sometimes opinion).
